Our house-made thin noodles are made with JUST Egg™, a premium plant-based egg substitute made out of protein-rich mung beans. Freshly squeezed spinach juice is rolled into our house-made dough to give these noodles their vibrant, verdant hue. Balanced with a light, savory kombu broth and topped with shiitake mushrooms, baby bok choy, sliced carrots, and bamboo shoots.
